Did you know that the U.S. Dietary Guidelines recommends that adults eat 48 grams or more of whole grains daily and children ages 4-13 years old eat a minimum of 40-48 grams per day. That’s quite a bit, however, studies have shown that the majority of children and adults are not consuming the recommended amount of whole grains. Nature’s Harvest® Bread would like to encourage families to get their daily whole grains in by launching the “Whole Grain Challenge on Facebook.

From July 13 to August 10, participants can take the whole grain pledge on the Nature’s Harvest® Facebook page and they will automatically be entered into a weekly sweepstakes. Participants have the chance to win a Family Movie Night, a family sports gift card or a $100 family grocery GC! I encourage you to take the Whole Grain Challenge because eating more whole grains has so many benefits. Whole grains are an important part of your diet because they “play an important role in lowering the risk of chronic diseases, such as coronary heart disease, diabetes, and cancer, and also contribute to body weight management and gastrointestinal health”.

Now getting all your whole grains in your diet doesn’t have to be boring. Try switching out your morning white toast and lunch time sandwiches for some Nature’s Harvest® Butter Top Made with Whole Grain Wheat Bread instead or as a treat, make my Wild Maine Blackberry Whole Grain Bread Pudding for dessert, switching out the normal white bread for a whole grain option instead! I bet your taste buds won’t be able to tell the difference, but your body will thank you for it!

Wild Maine Blackberry Whole Grain Bread Pudding – Giveaway Ends 8/10

Ingredients

  • 1-1/2 loaves (24 ounces each) whole grain bread, such as Nature’s Harvest® Butter Top Made with Whole Grain Wheat Bread
  • 1 quart heavy cream
  • 3 cups sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 3 to 4 cups blackberries ( I picked wild ones from my yard, but store bought is fine)
  • 1 cup sugar
  • 1/2 cup apple juice

Instructions

  1. Preheat the oven to 375.
  2. Cut the bread into 1-1/2 inch cubes.
  3. In a large bowl, combine the cream, sugar, egg, and vanilla.
  4. Add the bread cubes to the cream mixture, coating well.
  5. Let sit for 30 minutes, stirring every now and then, to allow cream to absorb completely.
  6. As you're waiting, combine the blackberries, sugar, and apple juice
  7. Stir until the sugar is dissolved.
  8. Spry the bottom of a 9×13 baking dish with cooking spray
  9. Spread about 3/4 of the bread mixture in the pan.
  10. Pour the fruit over the bread mixture, spreading evenly.
  11. Top with the remaining bread.
  12. Bake for 35-40 minutes at 375 or until lightly browned.
  13. Enjoy as is, or add whipped cream or ice cream!
